As all in the Voyager line do (except the Old School), show on the screen the level setting when you move away from it.
Sometimes I'll be modifying a patch and won't be able to find my way back to one of the parameters unless I reload the patch thus losing all my other tweaks.

Why not just run a sub out from the One to your 103, then main out and aux out from the 103 into a mixer where you blend it with the One?

Send the mix of all your sound sources through an aux send to your Foogers. This is the most efficient way to use them.

Not having done this myself, I would guess that you're pretty much going about it the correct way. One thing I would refine in your example is that since the knobs only go from 7 o'clock to 5 o'clock, 3 o'clock is not halfway between 63 and 127, it's more like 3/5's of the way there. That ribbon cable there is for power. When it connects to the original case, the PSU connects via the ribbon cable.
