How is it that if you turn all the oscillators off, but turn the resonance all the way up, upon hitting a key you can still get sound? This sound is passed through the filters and evelopes like any other. But if the oscillators don't create it, what does?

The filter can self-oscillate when the resonance control is set high. The sound you're hearing is basically a sine wave generated from the filter itself. You'll find that turning the resonance control down (CCW) will eventually stop the oscillation. Note also that the frequency of the sound is set by the filter frequency control.
