My guess is that it's all filter and the fact that he is controlling Gate (env) from the keyboard so gets that stuttering effect. Unfortunately, the Phatty doesn't have the circuitry or firmware to tweak incoming audio to the extent that frequency is normalized to match that of the key being played.
