Is the Beat Freq the Freq Knob on the sub phatty when Hard Sync is Depressed?
No, Beat Freq is independent of VCO Reset (Sync depressed on the hidden functions).
I can’t help you with the MIDI stuff, but it’s pretty simple… just look the manual.
