I’m now wondering if each pot can be assigned a Midi CC# by the user, or are they “hard wired” by Moog. I’m really hoping I can simply assign them the Midi CC# that I want for them myself as opposed to them being only what Moog has pre-assigned them to be…

I don’t know what synth you are referring to, but for the Sub Phatty CC#s are not configurable AFAIK. Pages 38-41 of the manual list all of the parameters, CC#s and value ranges.
