Yes, I agree -- nice result.
I am also curious about your recording process: Do you lay down a basic track (say, with an 88) to sketch out the concept; then, follow up. replacing one part at a time until the arrangement is complete?
Whatever it is, the outcome is certainly successful.

Yes, Double Helix. That's the general process.
I first create a MIDI and compare it with the original audio., just to be sure all notes are in the right place.
Then I try to stick as much as I can to the 3x3 template (in the Final Fantasy arrangement was quite impossible, for example), merging/arranging tracks.
After that, I start recording layer by layer when the resulting sound is convincing.
