It's available as a modulation source via Advanced menu, not 'built' into the hardware. Moog added S+H plus Noise with 2.0 (I believe that was the OS release).

Am at work currently but if you cycle through the Advanced section, you'll see it. There should be doc online here under the LP Product page and the appropriate tab that explains this or shows the menu tree.

What version OS your are running on your Stage 2? The answer will be slightly different depending on your OS.

so you mean it not an actual noise source you can just turn up the volume on and mix it in the sound, it has to be modulated in by the wheel?

From the manual:
Source:
The SOURCE switch selects the source of the modulation. Each time the switch is pressed, it advances to
the next modulation source, as indicated by the corresponding LED. Four of the selections allow you to use
the LFO as a modulation source. When any of the LFO waves is selected, the associated LED will fl ash in
time with the LFO rate. The available Source selections are:
- LFO Sawtooth Wave
- LFO Square Wave
- LFO Triangle Wave
- LFO Ramp Wave
- Filt. Env. (Filter Envelope)/Sample & Hold
- Osc 2 (Oscillator 2)/Noise
It is strictly under the modulation section as a source and can be manipulated like other sound sources. But it does not function as a stand alone/independent sound (like an oscillator).
