Outboard Limiter recommendation

Hi all
We have a Moog One 16v that we absolutely love. My partner plays it like the instrument it is - while I must admit I just run MIDI sequences into it and press presets!
She wants time in the studio to create patches, and experiment without anyone in the room. I am typically there moving the fader on the SSL Big Six that we use for input due to all the changing dynamics that the ONE is known for.
However, if I am not in the room - and I set the recording to start and leave - there is nobody to watch the signal > noise and the peaks that can happen when filters get opened up.
I was looking for a 500 series stereo limiter that could act as a "helper" when I am not there to record. However, this is heavy handed - and I am concerned about losing the dynamics. Or I can be concerned with losing the magic of the experimentation! (Which of course is GOLD).
Any suggestions, anyone doing this? What's your outboard chain from your Moog One before hitting your DAW?
