If I wanted to interface my Sub 37 with something modular to get more possibilities, what do you suggest?

The Mother 32 without doubt if you want a more modular-style setup.

You can use MIDI from the Sub 37 keyboard to drive the Mother 32. You can use the Mother 32 patch panel outputs to drive the Sub 37's filter CV, pitch CV, volume CV, and KB gate. You can also feed the Mother 32 audio output back into the Sub 37 or vice versa.

That's quite a lot of patch flexibility. You'll need few 3/8" to 1/4" cables or adaptors of course.

The CP-251 would probably not be as useful as it's not a sound source in itself and the Mother 32 provides more functionality for CV processing anyway. The CP-251 is pretty expensive for the simple circuitry it contains.

I've never had my mitts on a Werkstatt but it seems rather limited. I have a few Mother 32s and a Sub 37 and they play well together.
