does anyone else ever think about incorporating additional envelope generators into their voyager/cp251/vx351 setup? wouldn't this be possible with modular hardware?

Yes and yes (and don't forget about using external LFOs or sequencers, too). The Voyager has the CV I/O to make a lot of things possible... :D

Absolutely! One of my new favorite ticks is mixing multiple envelopes together going to the filter for extra plucky sounds.

ColorForm, I see you have a couple Q109 Envelope Generators. Is this what your using for additional envelopes? I'm thinking about getting some eurorack envelope generators but I think Q109s might be a better option.

Yep that's what I'm using. I'm also looking into the synth cube dual buchla style envelope generators and the cosynth dual looping envelope, LFO, oscillator and more. Both are in MU and would interface with Moog gear nicely. Euro has some cool stuff too.
