MP-201 replacing pedal with knob.

Hello all,
I've owned the Multipedal for many years and I love it, but I guess I'm not coordinated enough to use it gracefully with my foot, so I've placed it at synth level and have been controlling the pedal with my hand rather than my foot.
I've been toying around with the idea of modifying it by removing the pedal and mounting a potentiometer in it's place (a big aluminum knob). Seems like this is do-able, but I have very limited experience with electronics, so I thought I'd put the idea out here and see what advice I get.
What range and taper should I be looking for in the pot.
Is an encoder more appropriate than a potentiometer?
Any way to get the led feedback sent back to a led ring encoder?
Any and all advice/ideas/resources are welcome.
