here's a video demo and link to the 'TB MIDI Stuff' MIDI controller template I made for the iPad to control all the sub phatty's 'under the hood' CC parameters covered in the manual:

TBMS is available for under $5 in the app store and can send CC, SYSEX and NRPN MIDI messages. Have fun!
