If folks wanted a "T3 in a double sized 251/351 enclosure" that was desktop and could just be used with Midi pedals then buy a buy a Nord Pedal 27... whoops! The Nord 27 is $2,100 and is JUST a midi board.
But seriously, if you could just buy a set of Midi pedals economically, you'd be missing the well laid out foot switch arrangement. If Moog were able to make a T3'ish design that had the front half of the beast (ie. pedals + foot switches and foot wheels) or is that the back half?; then a different module that could either be desktop or racked, you'd be talking about another $500 minimum. Gigging musicians would have to worry about transporting that also, two power supplies, where to put it in a live scenario, etc.
Gets messy fast.
Love your Taurus for what it is. We all can't have it all (well, as I say... Paul Shaffer can, but we can't)

I can speak, from experience, for and against the module form-factor for the new Taurus as I recently completed my T1 Table-Top-Project.
(2 years ago I purchased a ‘scrap’ damaged Moog Taurus 1 main-board on eBay and built everything else around it and added MIDI.)

I love the versatility and features of the T3...Since I am still tweaking, the T3 sits at table height and facilitates easy access to the T3 controls for adjustment.
My Custom Table-Top-Taurus 1, (stereo Bass
...yeah!), also sits at table top height placing the T1 variable controls at arms length for tweaking and button pressing.
Presently, both Tauruses are triggered by Roland PK-5's so that I can play with my feet. I found that the table-top format is great for initial patch modification, but for performance, especially if you have a guitar strapped on, you'll want to switch patches by foot.
Although it is very heavy, the T3 is good value as you get a controller and sound module in one package. If the T3 was a separate module, you would still have to haul around a controller of some sort. PK-5's are great, but they don't have the 'moog' logo!
