Because that seems a woefully small number by any standard. Just wondering if I'm missing something.
Are the 64 patches the come with the Moog One all that there is?

No, there are much more 
If you can´t scroll with the big knob more than 64 patches, you can try this:
Just create a new user space. You can decide, if you want to fill
the new space blank or with factory presets.
Since Firmware 1.4.0 the Preset Packs also include the CLASSICS, KING/KEVIN LAMB, STEREO FUTURES and TRANSFORMERS preset packs.
Since Firmware 1.5 you get this wonderful presets of Lisa Bella Donna "Moog One Presets 2022".
