Or vice versa. I want to hold one note, and play others above it, but I can't. What is the function that allows you to play above or below a sustained note? Sorry if this is a vague question.

This is a common parameter on monophonic synths: note priority.

As you can press several keys at a time and the synth can play only one note, you have to tell it which key is relevant. The usual values are:
- Low key priority: the lowest key pressed will play the note
- High key priority: the highest key pressed will play the note
- Last key priority: the last key pressed will play the note

one of my favorite features of the latest Moogs, especially when playing leads or fast sequences with one hand while knob fiddling with the other

If I use "last note priority" hold down a note, and while still holding that note, pressing a new key and letting it go, will the first one play AND trigger the envelopes when the second note is released. I like it like that, not only getting the first notes frequency but also a new env trigger. Is that what the single/multi triggering modes are for?

What bothers me about the factory setup is that the note priority is either set for up or down and not both. Why would they limit you like this? I think every presest should have been sent with up and down. I know I create a lot of my own sounds but it just seems silly that the presets limit you by choosing one or the other when both is an option. I wish there was a why to do to a global change for this feature and change all patches to up and down.

The low note priority was the original Minimoog characteristic. And many playing styles of famous and not so famous Minimoog player depends on this feature set in this way. But of cause this is a personal preference today, as the modern synths are able to change this by the user. If you like the last note mode, which is about like a combination of both (low and high note priority), use this.

You may change the presets automatically by adjusting the sysex data manual to get your favourite mode (the last note mode?) for all factory sounds. And I think this is possible on the Soundtower editor too using the Single Paramter Adjustment. But I have not checked it here.

That's why most of Moogs classic riffsters solos have a lot of descending runs...

It's also why I'd prefer a Voyager to a Model D..
Cause I'm a rubbish player and don't play clean enough for low or high note priority...
