I know that you need the synth that you wish to receive sequence notes/data to be able to accept CV or have a CV/MIDI converter, but what do I use on the patch bay to connect the M32 to another synth and sequence it?

You can use the KB control voltage out and gate out to sequence another analogue synth. I find the results are pretty unreliable with the Mother 32. Scaling/tracking problems even between two Mother 32s.

I've had zero problems when using the method you describe to use the Werkstatt as a second oscillator. I must say though, none of my sequences use more than two octaves range

It might track acceptably over two octaves (if you have a tin ear), but it is not accurate at all. This is the price you pay for 'pure analogue'.
