Which app? I can turn more than one knob simultaneously on Animoog or Model D, whether on-screen or mapped to an external MIDI controller.

Model 15 only allows one knob to be turned at a time to reserve two finger pan gestures for navigation. When designing the app, we felt it was important that moving and zooming the modular would never carry the risk of changing the knobs or switches. Since there are so many controls on the modular, this allows for comfortable exploration and navigation that never unexpectedly changes your sound or requires you to carefully avoid touching any of the controls.

I wonder if we could add a switch like this. You can control multiple knobs at the same time if you need them, and turn them off if you don't.Just like Mirack App

I agree “What Water”. Aside from miRack, Bram Bos Ripplemaker also allows multiple knobs, sliders, etc. to be manipulated simultaneously. The two finger navigation is redundant on Model 15 given there is already a Navigation Bar.
