Minitaur v2 as Theremin CV-to-MIDI Converter

I just got my Etherwave Plus and Slim Phatty. Neat neat neat devices,
and my first analog synths. I’m thinking of some wild things to do
using the CV output of the theremin… like controlling lighting and
visuals… but information seems scarce on converting CV to MIDI
values. Can anyone recommend a solution? Does Moog produce one?

If you needed an additional reason to want a Moog Minitaur, this may be it:

By mapping the Pitch and Volume CV Ins to various parameters and then
mapping the CC# for those parameters, you can effectively create TWO
very useful CV-to-MIDI converters. If you’re clever about which parameters
you map, you can still use the Minitaur as a synth or a filter for external
audio at the same time it’s doing the conversion.
