I know I can remap the pots, but can I make it so they do not send any data at all - it keeps muting tracks and allsorts in Logic, I have found a work around using logic’s midi filter but I had hoped I could turn this off in the moog itself. Is this possible?

Master Mode, Utilities, midi channels… setting the out channel to off should do it.
Edit: it will silence the notes too. It’s ok if you want to play the Phatty from Logic, but not of course if you want only the notes out of the Phatty. But why use a synth with 37 keys for that? A midi controller keyboard may do a better job at this, most have more control on their midi output.
