People have different perceptions of tone, and sometimes it's hard to reconcile them. I've always felt that the Phatty is a very pointed sound... gritty, and hard. The Sub Phatty has some unique applications for a modern Moog.
The one I had was a prototype, so it may not be exactly what the production model will be, but it had a distinctly different sound.

I gotta say... sometimes I wonder why some of you are interested in Moogs. DESPITE its extremely stable oscillators, the Sub Phatty has a great tone. Why do I say "despite?" Because you don't want stable oscillators. The hassle involved in tuning an oscillator is WELL worth the benefit... ...
