Download the Werkstatt manual online at Moog. It is very detailed and includes calibration instructions (starting page 21).

Just a warning, a couple of us here have had problems with the Werkstatt when using too _low_ voltage power supply (9V):

So I don't know how much higher you can go, but definitely make sure the supply gives at least 12V under load.

Who knows? Maybe they're busy enough selling M32s and Sub37s. There's nothing that says you have to come out with a new synth every year to be successful.

That seems like it could be really useful! Could you even control it with a non-keyboard instrument (horn, clarinet, guitar) as long as the signal level was correct? The SE-02 is monophonic.
You may be thinking of the other Roland Boutique instruments which are digital and have four voices.

I don't know about this specific pot, but in other BBD chorus pedals, there is often a pot to adjust the bias of the signal going in the BBD chip. This is to maximize headroom. Changing it wouldn't change the sound in a correctly-functioning pedal except to add clipping distortion.

Maybe they're set for the wrong MIDI channel. The default setting is channel 1 for the M32. Set your keyboard or DAW to transmit on that channel to see if that works (and cycle through all 16 if it doesn't).
