Sir Noise is correct. The Value switch is toggled by pressing the knob, not turning it.

I imagine Moog has considered OSC2 FREQ ranges and why they do not need to go > P5ths.

He is using the LFO through the filter.
Two oscillators, probably same octave at 16' and using square/saw waves.

Cheap and effective to just buy a piece of wood and lay it across your current stand. That's what I do.

On Page 5 of the Stage II Manual Addendum, it touches on Master Mode menus.
If you take some time to read it, I'm sure you'll be able to navigate the LP menu to the LFO/Arpeggiation clock sources. It's pretty straight forward.
