Sounds like possibly a cable or USB jack problem. Try getting a different USB cable first and see if that resolves the issue.
Do you have any issues with other USB-connected devices?

The Sub 37 is a much better synth - very similar if not the same architecture, more knobs so less menu diving, more keys, arp and sequencer, etc. I think the only advantage of the Phatty is it has CV In? ??? If you have the money for the Sub37 now without breaking the bank, take the Sub Phatty off your list. Moog is giving it out freely and already stated that it is a beta and and can not be responsible for errors. as As someone who has owned over 45 synths in the past 35 years (counting doubles) i would say i can handle it. Is there any info on when 1.1 is available for us? (can't wait to play with the new features!! :D ) Amos said in the video he believed at some point in February. As a developer myself, I can say from experience that target dates are often not hit, but I would imagine within the next couple of month...

If you don't want to "waste" an LFO - the CP-251 is always an option, or even an expression pedal gently modulating the pitch CV input.
