You are not specific enough regarding the device you are asking for. Supposed it is a Grandmother or Matriarch, the PITCH IN voltage adds up with the OSC voltage. It doesn't nullify the OSC. I suppose what you are looking for is in the MIXER section. Putting a connection into OSC x IN cuts the audio...

The internal pitch CV is the CV generated from a key press. You'll want to make sure that the last note played on the keyboard is a C in order to get it to play the same note. Can confirm is normal GM behaviour.
You can get very divers ARP EG profiles playing around with VCA MODE setting, as well as patching -ENV > VCA AMT IN (will invert the EG profile).
