You could just put unconnected cables into the STEREO DELAY INPUT 1 and INPUT 2 jacks, thus bypassing any input into the two delays.

I do it all the time. You can tweak MIXER, FEEDBACK (FDBK), and MULTIDRIVE settings if you don't like the slight changes in gain staging. But you may just like them just as they are.

If I plug cables into the second Attenuator, then the first Attenuator controls filter cutoff (no cables in the first Attenuator at all). TRS 1/4" cables are particularly useful with Moogerfoogers and the CP-251 as they won't short out the +5v DC that goes to Expression pedals. It won't hurt them to use TS cables but, since the +5v DC has been (safely) shorted to ground, you can't use TRS Expression pedals in any of the other jac...
