Got in touch with Moog support, and for now, this issue can be resolved by choosing to either receive or send midi in Ableton, setting up both at the same time cause this issue with the HOLD function. I agree, the keybed on the GM is lovely and soo satisfying to use. But the velocity sensitivity doesn't have much range, I either play it at full on or super-soft, but getting it to play expressively is undoable for me.
