If you can get a hardware MIDI controller that plugs directly into the DIN port on the Minitaur you could determine if the problem is with the computer / software / USB->MIDI controller or with the actual Minitaur.

I use my Little Phatty and Slim Phattys (aka: Phatt Bastard )all via DIN only. I've found having the USB active is a problem. I have my MIDI ports set to DIN and Merge set to NONE.

If I have to use USB for some reason I can always plug the cable in and switch the port on.

Somewhere in my quest for Phatty knowledge someone mentioned that feeding an external clock to the Phatty chain can contribute to the note-drop effect.

While I didn't reach my goal of 8 voices in 2018 I did manage to slip a sixth Slim Phatty into Phatt Bastard 2 days before the year ended bringing the total number of voices (with the Little Phatty controller) to 7.
