Modular signals are super hot. There's no way you can damage the unit by touching the cables like that. That's actually a common trick in modular, and some companies even sell special output jacks especially made for touching and tweaking: http://www.landscape.fm/allflesh/

I so very badly wish that changing the delay time while tempo was set via tap tempo had the same behavior as it does when tempo is set via midi clock. I don't have a M32, but when I send the Minitaur CV from my voyager, it plays higher than I expect it to (minitaur note ceiling not withstanding). It's been over a year since I've been in the same country as my voyager so I'm not totally sure if it was an octave higher or a fifth higher or what, but...

If you used CV with the expression pedal input of the chorus, would you be able to get a flange out of it? Or is the delay time just not fast enough?
