I wanted to know if any knew the difference between a potentiometer and a rheostat. Does anyone know the difference / have more detail to offer about it ...

Yes, that too...expression pedals are totally underrated. Also, the fine tune knob, but that won't throw the pitch off enough for Minimoog type drift.
