I think it is linked to the sequencer, start n stop buttons. The midi out settings describe what is sent out the midi outs, so if you start the sequence on synth one and its on midi channel one, that's what data will be sent. and I would assume the transport values start n stop are sent accordingly.

You need to use NRPN values to change the volume of each oscillator. Page 154 of the final manual, has all the values you need.
